What are these "capers" look-alike in my stir-fried frog

These were absolutely incredible, and never tasted anything like them in Asian cuisine before. They had this strong umami flavor, that made you immediately salivate when you chewed on it. It was also strangely slightly cooling. I couldn't find anything on it.

Breaking down wood

I only have a small backyard and try to optimize every inch of it in a green way. I recently cut down a pretty large invasive shrub which left me with huge amount of woody sticks which have NOT been composting well (unlike everything else). I have tried peeing on it, stacking leaves, and watering, but it's taking its sweet time. I also plan to have alot of sunflower stalks soon (which are also a pain to break down. Any advice?
