Ceviche in the park on

Ceviche how my gf grew up with it!

1lb shrimp cut up into small chunks and put in a non-metal bowl with so much fresh lime juice that the shrimp is completely covered (took me 6 limes). Let it marinate for bare minimum 3 hours but overnight is good. The acid in the fresh juice will cook the shrimp. Then just dice half a red onion, two Roma tomatoes, one English cucumber, and a ton of cilantro with some salt and pepper. Slap that on a tostada. Amazing light and refreshing meal to eat on a hot fay.
