looking for advice on human plush making!

still would love any sewing advice cause i am a relative beginner!
hi guys ! i want to make my boyfriend a little doll of me (like juvia from fairy tail with her gray dolls LOL), but i have no idea where to start. i don’t have a sewing machine so everything has to be hand sewn, but i have a decent amount of experience sewing, following patterns, and embroidering.
i want to go for the shape of this kamina doll i have, and do the same layering for the hair details, then maybe make one outfit.
is it better to get a premade body and add onto it? what sort of fabric will i need to be getting? (i live in southern ontario, and the only big fabric stores i have around are michael’s and fabricland) is there a good resource for sizing/resizing doll clothes? i’m also hoping to not spend TOO much on this, i already have stuffing so that’s not an issue.
any advice would be appreciated! i’m mostly concerned with the things i mentioned above, but as im almost totally new to this i will take anything you want to give LOL!
