Low keyish spots for flyover watching?

I’m a larger guy around 270 pounds I had a Fuji I believe absolute 2.0 the hunched over position kills my lower back and makes me not want to ride for more than a few miles and I’m a beginner so I’m still trying to figure out gearing on hills
I know one problem I have is I have no cushion on my rear end it’s all in my belly so I’m thinking of using a woman’s bike seat to make it somewhat more comfortable
What bikes do you suggest I’m trying to make this my cardio but really want to enjoy riding next to the river on the path next to my house
Iv been eyeing a rambler or tribe. My wife and I went tandem kayaking in a spring in Florida and fell in love with it.
I will say I might've been super worried for her because she doesn't swim and did not / do not want to capsize so one of the most important things for me would be stability.
Is this doable? Any recommendations? Im trying to say under $1000 Northern Virginia we are beginners
after eyeing the rambler and tribe iv ventured off into Brooklyn Kayaks. I know there isn't a one kayak does it all but this would be something we could use on the Potomac river or Shenandoah
