First time playing in China. What am I trying to achieve?

Long time Ck2 and Ck3 player, but first time playing in china with dlc after a long break from the game. I started in Tang with a local leader which obviously fell apart quick. I reunited China under me just about within a generation. Since then I seem stuck in a pretty unfulfilling loop. I inherit, put down an inevitable rebellion, spend loads of money on grand projects to spread culture and religion whilst stomping annoying black turban rebels. I die, cycle repeats. Any expansion is cripplingly slow as no cassus belli. Diplomacy generally is pretty limited. I don't always need to be map painting but even playing tall in Europe involved a lot of diplomacy, religious conflict and fighting to get my dynasty on other thrones. Am I missing something?

So I like to take my kids on bike rides in England. Near us we have a network of footpaths like the one in the picture. These are footpaths and not bridleways. The land owner of one has put up gates on his section with no bikes and horses signs. I've tried respectfully dismounting and walking my bike through but he came out and harassed me with dogs. My understanding was if I walk the bike through this section to get between roads then I'm a pedestrian and he can't restrict that on a public footpath. Am I right or should I stop using it altogether. Secondly can he stop people cycling through as well?
