Is Upgrading From Cup-and-Cone, Square Taper, possible?

Restoring an old bike, that had square taper, cup-and-code bottom bracket. Removed it and determined that:

  • thread type is BSA,
  • the legacy axle is pitted.

Drivetrain used to be 3x6. I want to convert it to a 1x. I'm thinking of buying a new BB with sealed bearings, but not sure, which upgrade path keeps decent chain line.

Researched three options:

  1. New BB with square taper — least appealing since I don't care about legacy cranks nor pedals and replacing those too
  2. Shimano Octalink — older tech, but it's still a three-piece system, so maybe better backwards compatibility with the square taper spacing?
  3. Upgrading to Shimano Hollowtech —most modern option, but worried it'll throw off the chain line, because bearings are outside the shell.

Some photos of the teardown included.

Are these dropouts safe for quick release skewers?

So I'm restoring an old steel bike that has wheels with solid axles, I'm wondering if it's safe to install a quick-release wheelset?

Chain dropped into spokes — hanger, derailleur, or both bent?

While riding a forest trail, the chain dropped off the largest rear cog and got wedged between the cassette and the spokes. I was going slowly and stopped almost immediately.

I managed to free the chain and put it back on, but now the shifting barely works:

  • The two largest cogs are no longer usable.
  • The other gears skip frequently.

This is the first time I've experienced anything like this.

I've included a photo of the chain line below:

  • Derailleur Shimano XT RD-M8100 (12-speed)
  • 1x setup, no chain guide
  • I’m fairly sure the clutch was engaged

Based on the photo:

  1. Does the derailleur hanger look bent?
  2. Does the derailleur cage look bent?
  3. Could both be bent?
  4. Or is it impossible to tell from the photo alone?
  5. Also, is this common, should I keep a spare derailleur hanger on hand?
  6. Besides correctly setting the limit screws and making sure the clutch is engaged, are there any other ways to prevent this from happening again?
