NHD Moritaka AS Kiritsuke 240mm Rosewood Copper Handle

I decided to put an idea of ​​mine into practice: a handle made of dark rosewood with an angled copper spacer. Unfortunately, the wood grain almost completely disappeared after oiling; I’m hoping it will come back once it dries. I think the handle suits the Moritaka quite well—what do you all think?

[WTS] [EU] Kyohei Shindo AO#2 Nakiri Custom Handle

It’s time to part with a few knives.
First up is the Shindo Nakiri.
I don't think much needs to be said about this knife here.
It is brand new; I merely did some slight straightening of the blade.
It comes with a very beautiful new handle that I crafted from spalted beech.
The handle is sealed with natural oils and waxes; I fitted the blade without glue—simply burning it in, wedging it with wood shavings, and then sealing it with beeswax.
I am asking €145 plus shipping for the knife.

NHD Shindo Nakiri Handle Upgrade

I made a new handle for the Shindo, because the original ones just don't work at all. The plastic ferrule is one thing, but I find the smell much worse. It is oiled and waxed spalted beech, not glued, only burnt in and beeswax sealed.

NKD Anryu Tsuchime Aogami#2 Bunka

I think I have a "knife problem"—whenever I see a beautiful knife for sale, I find it hard to say no.

Is there a support group for this? "Knife Addicts Anonymous" or something? This time, this beauty caught my eye:

an Anryu AO#2 Tsuchime Bunka.

Takumi Ikeda has once again forged a truly beautiful, high-quality knife.

It’s one of those knives where you pick it up and immediately sense the quality.

The blade is 170mm long and 47mm high, beautifully ground and polished.

NKD x2 Mutsumi Hinoura Ajikataya Hakata W2 & Miyazaki Kajiya Tsubaki B2

These two beauties moved in with me yesterday.
I have a real soft spot for that somewhat archaic-looking shape.
The Hinoura Hakata came from BST—thanks TheMightySwiss.
I got the Kajiya (not my first one) directly from Japan.
Both are beautiful in their own way, though the Hinoura features finer, more detailed craftsmanship compared to this Kajiya.
I’m curious to see how they perform.

NKD Yoshichika Isshindo Blue? Usuba/Nakiri/Nata?

I’ve picked up something interesting again.
It’s hard for me to say exactly what it is or how to classify it.
Maybe one of you has seen something like this before.
It has a single-sided grind and—as you can see—is almost square in shape.
It features a 120x80 mm blade and a rather chunky walnut handle.
Test-cutting rhubarb went quite well; it makes a very sturdy impression—sort of a cross between a knife and a cleaver.
But I think it’s actually pretty cool.

NKD Isamitsu Shirogami #1 Kiritsuke 210

I couldn't resist once again. It really caught my eye at the Meesterslijpers outlet sale. The build quality is quite solid, and the pentagonal handle makes for a nice change of pace. We'll see how it performs on the cutting board. It’s listed as a 210mm model, but measures 219mm in length with a height of 54mm.

A whole lot more arrived today, including this exceptionally beautiful set consisting of a Santoku and a Petty. Unfortunately, I can't say who made them. Perhaps one of you has an idea. There is still a protective coating on the blades; I’m curious to see what they look like once I remove it.

NKD Miyazaki Kajiya Tsubaki x2

NKD Miyazaki Kajiya 宮崎鍛冶屋

Arrived from Japan today: two Tsubaki knives by Haruki Miyazaki. As you can see, they come with a patina, and these beauties will likely require a bit of work. I absolutely love these knives with their raw, authentic look. You can clearly see who he learned his craft from (Ohba-san). The workmanship and details, however, are on a whole different level.

Today this beauty arrived from Sakai. Somehow I like these smaller stable gyutos. They are more handy and manoeuvrable for normal daily work. The test cherry tomatoes were very neatly divided.

This Matsubara Bunka is a little bit bigger one. Blade length: 195mm, height is 60mm. Nevertheless, it feels very comfortable and manoeuvrable. Let's see how it goes in everyday life.

I finally managed to get my hands on one, the original Hakata Bocho by Toshio Ohba.

The last blacksmith in Fukuoka City. Now over 80 years old, Mr Ohba has been making knives for over 65 years.

It came second-hand from Japan; the previous owner had it thinned down a bit and fitted with a new handle. Despite this, it hasn't lost its rustic character. I like knives with a history and a look that shows the handcraftsmanship. Somehow, pieces like these have more soul.
