Storing potatoes without them growing arms & legs?

Everyone I ask, tells me they usually don't see growths after a month, even two months, and are completely fine to eat.

But I always see them after a few days from being bought from a shop, these in particular are a week old.

I will say they are always the wilsons brand I buy since they're the best value medium bag.

These were stored in a Dunnes bag under the stairs (cool, dark and not damp)

I have tried everything from the kitchen cupboard, brown paper bags, leaving them in the plastic bag, putting them in an unused pot, leaving them on the counter... but nothing seems to get past the week threshold.

Is this normal?

Is there a fool proof method to storing them?

Or just cook them in the first couple of days of getting them?

Really annoying as I detest the look of them, kind of turn my stomach a bit and then the fact I have to carve out a bunch of holes too.

Coffee drinker, but wanted an ol cupa before bed (which is rare). Rare enough that it appears to be over 3 years since i last checked the date on me tea bags.

Its been kept in the same small top shelf cupboard like most people but untouched though.

Just normal tea smell from them. Initially i bought them for visitors so i dont mind if theres mild off tastes, but not something i'd want to be serving to guests. Should i just bin em?

*Edit

Can confirm i did have a cup and survived the night. Didn't notice any different with the taste and if there still in the cupboard a year from now ill have another.
