High tea - 5th birthday party

Made these as a gift to my coworker’s daughter for her high tea themed birthday party. Would make some modifications if I were to do it again, but all in all.. I’m happy with them. I know little missy will be thrilled, so it’s all that matters!
Appreciate input, tips, or any advice from the more skilled cookiers on here! I don’t make them to sell. I only do this for free, for close friends and family, or on special holidays to take to work, so the pressure for perfection is only from myself 😅🥲

How long do you leave your cookies out for?

I bake my cookies on one day, and decorate the next. I will then leave them out to dry overnight before packaging them in a sealed bag.
Sometimes I just don’t get around to finish decorating them all in one day though and that’s when I start getting nervous they’ll dry out and taste stale - they never did, but I also never went past that second day.
It gives me great anxiety and I can’t stop thinking and hearing the clock ticking in my ear, reminding me the cookies are sitting out and getting stale by the second 🥲
How long do you feel comfortable leaving your cookies out? How long does it usually take you on average to complete a set (of say a dozen) of cookies? Am I panicking for no reason? Any trick to help prevent them from getting hardened/stale?

Edible paint vs food gel coloring

This is a shorts from “Sweetambs” who I follow and am incredibly amazed at her work. She’s a true artist!!
She’s teaching on here how to make roses using a wet on wet technique, and I’d like to try this. She uses edible paint for the color, instead of icing, which to me sounds like a brilliant alternative so that you don’t have to mix up a bunch of colors of icing only to use a couple dots.
My question is: is edible paint the same as food coloring? My guess is that it isn’t because food coloring is so concentrated that even with a dot of it, it would yield so much color.
Can I use food coloring to make edible paint somehow? I don’t want to buy yet another supply 😅

My dominant hand is my left hand, and a year or two ago I tried using a projector. It was a complete disaster! I ended up returning it immediately.
The issue is that because I write with my left hand, it’s impossible not to cover up what’s being projected, while trying to write since my hand is hovering above the cookie, if that makes sense.
It makes me sad because I see others testimonies about how life changing a projector was for them, and I’d love to be able to take my skills to the next level, but seems like that’s not gonna be possible.
Anyone on here who is a lefty and has developed some technique for using the projector and avoiding the issue I’m referring to? Any tips would be appreciated!!

Considering investing on an airbrush system. Every one I looked at has mixed reviews, but as it stands I’m leaning towards this one. Does anyone on here own this device and can give me your honest opinion after using it? If you have a different recommendation, I’m also open to it!!
