General advice for a beginner inshore kayak?

I've decided to get off the shore and want to try my hand at fishing the Great South Bay on Long Island. I have no plans to go offshore, but would like to try the Long Island Sound (close to shore) at some point. I fully expect to upgrade to something better in a few years, but I want to start out with something I can pick up used from Marketplace or CL.

I'm looking for something that is easy to paddle and be used for both fishing and just paddling around the Bay. I've never been in a kayak, but I did grow up canoeing.

From what I've read I'm looking for something around 12' or longer, but I'm stuck on whether I should look for a sit-on or a sit-in. The sit-in fishing kayaks I'm seeing look to have large openings that shouldn't be bad to get in/out of.

And are there any brands I should steer clear of?

I appreciate any input y'all might have.

I started a gallon of cyser last month after not brewing for a couple of years. I added 3 lbs of honey and topped off to a gallon with apple juice. When I took the OG (1.158) I realized I added too much honey. I then doubled down on my stupidity by using a very old packet of D47.

I staggered my nutrients, and everything started to slowly take off. She bubbled away happily until last week.

The readings last week and this week were 1.074, which should be a respectable 10%-ish.

But it's way too sweet.

So, my question is how to go forward from here. I have an assortment of fresh yeast, including D47, EC-118, K1-V1116, RC 212, 71B, and QA23.

I'd love to get the gravity down to about 1.02 (not a fan of dry), but I'm not opposed to stabilizing and back-sweetening if need. I'm thinking of adding the Ec-118 and seeing if I can get close to 18%, which would put me close to where I want to be.

Opinions of where to go?
