Short Finger Lakes Vacation

My wife and I have a booking in Hammondsport in mid-August. We stopped there on the way home from Canada a few years ago and thought it was nice. We liked all the history, scenery, hiking, shops and wineries in the area but we didn't get to spend enough time there. I was looking and it appears that most of the bars and restaurants close at 8 or 9pm. Is that normal for the whole region? We usually eat around 8 and I don't want to be one of those couples that the staff are staring at because we ordered food a half hour before closing. Did we make the wrong choice for location? Any recommendations for people who stay up later? We're not young and noisy or anything (we're around 50) but we like to have some wine after dinner. Are the liquor laws weird up there?
