2000 GT overheating after a while of driving

I can't say how long it takes confidently but it's probably somewhere about half an hour of driving after that the system begins to overheat at first it would spray coolant out of the reservoir cap so I replaced the cap, I haven't let it overheat since I replaced it but recently after replacing it I have smelt coolant through my vents which before was usually an indicator that it was spraying out of the reservoir cap and I would pull over because it was smoking under the hood since it was spraying out so much hot coolant but when I pulled over there was no smoking and the smell this time was only brief however the temperature continued to rise even while I drove it would go from 215 to 217 while driving before I pulled over and let it idle which is when it got upwards of 225°. Before I shut the car off and let it cool down, I'm not entirely sure what's going on I have replaced the intake manifold which came with a new thermostat so I know that the thermostat's not bad though I'll probably just end up taking it out at this point I just don't know what could be causing the car to drive perfectly normal and perfectly fine for about half an hour before it just decides it's going to start overheating excessively out of nowhere any and all help is appreciated

When does the gt start overheating?

I recently replaced my intake manifold and accidentally forgot to add the coolant back, it ran fine for a while but I had recently gotten my AC fixed as well and running the AC on cold overheated the car at idle, after refilling it with coolant I'm not sure if the car will continue to overheat when idling, normally with the AC off the car idles at about 214° or 215° f but when the AC gets turned on the temperature goes up to about 220°, I turned the AC off when the temperature got to 221°, the high-speed fan never turned on though but everywhere I read online people say that 220° is overheating. I know that high-speed fan works because when I unplugged the coolant temperature sensor it kicked on high speed almost immediately. Basically all I'm asking is what temperature is the car's coolant supposed to reach when the AC is turned on and is it normal for it to be higher than 220° Fahrenheit or do I need to figure something out with the cooling system (I'm also going to leave this here the temperature of the coolant does go down with RPM increase it's mainly just overheating at idle)

RICH RUNNING PROBLEM

I've been fighting my car and it's rich running condition for a while now, I'll explain how driving it ends up working, after starting it cold it's sensitive on the throttle if I go too far towards the middle it'll struggle and almost stall out it's literally no throttle or all throttle, but the confusing part is that it runs perfect when it's at operating temp, so for parts I've replaced so far and the place I got them from here they are. Fuel injectors (eBay) I know not the best but I'm thinking of replacing the eBay parts with rockauto ones, MAF (rockauto), air charge temperature sensor (rockauto) spark plugs (twice now, bosh, platinum, AutoZone) fuel rail pressure sensor (ebay), I believe that's everything but I'll add it if I remember it later, I'm just tired of fighting this car, if you need any live data lmk it might be a bit before I can respond but I'll be happy to give it
