

Chilaquiles
Just used the recipe from Andy Cooks on YT. It was delicious!!!
Made hummus for the first time!
Soaked the chickpeas. Removed the skins best I could after cooking. Made some garlic confit that I blended in with the chickpeas, tahini, salt as well as some of the garlic oil. For plating, I just put some of the garlic oil on top with cayenne pepper and chopped parsley. It was really good!
Saturday night margaritas in the Sonoran Desert
One of the last really nice nights here in Tucson before it starts heating up for the summer. I love this place.
My margarita tonight:
2 oz - reposado tequila
1 oz - fresh squeezed lime juice
0.5 oz - Cointreau
0.5 oz - pomegranate syrup
Combine in shaker; shake and then strain.
I make my own pomegranate syrup and it’s super simple. For a 1:1 ratio just pour 1 cup of real pomegranate juice into a saucepan with 1 cup of sugar. Heat up until low simmer and let the sugar dissolve/mix into the juice and reduce a bit for a few mins until you like the consistency. It’s awesome in cocktails.
