Recipe for the Strawberry Basil Loaf with Lemon Cheesecake
Dough:
500g bread flour
380g warm water
10g salt
7g instant yeast
20g honey
Inclusions:
20g freeze fried strawberries
10 basil leaves finely chopped
Zest of 1 lemon
Lemon cheesecake filling:
12oz cream cheese softened
3 tbsp honey
Zest of 1 lemon
2 tsp lemon juice
2 tsp cornstarch
1 tsp vanilla extract
Pinch of salt
Strawberry whipped butter:
1 cup butter softened
3 tbsp ground freeze dried strawberry powder
2 tbsp honey
1/2 tsp vanilla extract
1/2 tsp lemon zest
Pinch of salt
Mix 320g water and honey, add yeast and flour. Form shaggy dough, let sit for 20 mins (autolyse). Mix rest of water with salt, dissolve. Add brine to dough. Knead until you can stretch dough thin enough to see light through it - I use slap and fold. During last minute of kneading, add the Inclusions and get enough folds in to spread throughout dough. Pre-shape and lightly flour dough. Place in lightly floured bowl and let rise 60-90 minutes until doubled. During this time, mix together the lemon cheesecake filling ingredients and place in the freezer. After rise, turn dough out onto lightly floured counter. Press dough to 1 inch thick, spread filling, fold dough to center and continue to shape your boule. Flip over, tighten boule with bench scraper and make sure seams are all pinched closed. Lightly flour and place seam side up in a floured banneton then cover. Let rise 45-60 minutes and preheat oven to 450°F with Dutch oven inside - at least 30 minutes. Turn the load onto parchment, score, then use the parchment to lower into Dutch oven. Bake covered 30 minutes, then uncovered at 425°F for 15-20 minutes. Cool for 2 hours before slicing! The steam is still working in there.
For the butter, just whip the butter and add everything else then mix. I just ground the freeze dried strawberry with a spoon in a bowl and didn't worry about leaving some strawberry chunks. I also served it with smoked sea salt.

This is the second attempt. On first try the filling erupted out during final shaping. This time I froze the cheesecake filling and gave up on the swirl. It still barely held onto the filling but it was tasty. I also made a strawberry honey butter and have smoked sea salt to finish

Not the best oven spring, and pretty closed crumb. But it tasted good. And yes, I put in ALL the chocolate.
