Gecko isn't eating

So I've made a few posts about the enclosure I have for mt gecko, and now, two weeks after getting her, I don't think she's eaten much, if at all. The reptile store I got her from thinks she's about 8 months old and said I should be feeding her 40-50 bugs a week, and she hasn't eaten close to that. Her tail looks to be ok, and she doesn't appear to be too thin. She is still extremely skiddish to the point where I can't really pick her up and try to feed her in a different container. I started with dubia roaches in a ceramic container, and some of them still managed to escape, so maybe she hunted some of em down and ate them. I then tried mealworms, and she didn't eat any of those, and they thankfully didn't escape. Every time I change her food, I do it at night and leave the bugs in the mostly escape proof bowl. I'm trying mealworms again tonight to see if she'll eat them. All my temps and humidity appear to be within range, so I'm not sure what could be causing her to not eat. I am fairly sure she's drinking water as I have to refill that every few days, but I'm not sure what else to do to get her to eat. Any helpful advice would be greatly appreciated! I posted a few weeks back asking for enclosure advice before I got my gecko. This weekend I finished it up, added some more clutter, added the clean-up crew, and then of course added the gecko! I'm hoping this setup will be good for her. Shes only been in it for about 3 days but seems to be stressed out. I'm hoping thatll change once she adapts. The reptile store I got her from thinks shes probably about 6-8 months old and advised me the loose substrate would be safe for her. Is there anything I can do to help her better adapt to her new home?
