No half and half in Australia, using milk with poor results

We don’t have half and half here in Australia so I’ve been making this yoghurt with full cream milk (around 3% fat content) after heating the milk to 80C. It doesn’t turn out very thick and is quite tarty. I have tried to mix in cream to increase the fat content, but during fermenting it just floated to the top and formed a sour yellow layer above the yoghurt.

If I’m just using milk, should I change ferment temperature or time? I do use inulin in the mixture.

Store bought kefir gives better benefits than homemade?

I had been buying bottled kefir made from pure milk (not milk powder) and my gut was feeling great when I was having that regularly. I’ve switched in the past few weeks to making my own at home from grains.

Even though the milk is fermenting and tastes tangy and fizzes lightly, I don’t feel I’m getting as good health benefits from my homemade one.

Anyone got any thoughts? Or am I just imagining it?

I've received a quote through Easi Novated Leasing for a Zeekr so far, but after some re-thinking this weekend, I've let my leasing consultant know that I'm keen to explore 2 other cars instead and have requested quotes for those.

I've just been told by the leasing consultant that before he provides any extra quotes to me, he needs to determine my serviceability for the novated lease and needs me to complete a finance application for pre-approval.

Is this standard practice at all through Easi's quote process or is he just being painful? It's pretty annoying considering I can't get a quote myself through their website.
