A pair of midsize Mexican markets bookend the vibrant Mexican food scene that runs along La 29 in Oklahoma City, a shopping hub for local Central Americans and Mexicans, especially those from Aguascalientes, one of the smallest states in Mexico. Inside the store, overfilled aisles of sundries are encircled by a vibrant panadería case, a carnicería, a window for check cashing and money transfers, and a kitchen behind steamer trays of Mexican stews. The most coveted item comes out of a small commercial oven that produces fresh birotes, the Aguascalientes-style roll and traditional vehicle for the state sandwich, torta de albañil. The market’s fresh versions are slit open on one end and stuffed with a ham cold cut, pickled jalapeño and crema Mexicana until it leaks out the opening — a little taste of home for the city’s Hidrocálidos.
