In northern China zhan jiang cai is a very popular dish where you dip raw veggies (scallions, cucumbers, radishes, lettuce) into fermented soy bean sauce. As someone whose family is from northern China, I was really surprised when people say that the Chinese do not eat raw vegetables. Later on figured that this was more of a regional thing- southerners are the ones who have an averison to raw produce.
Kinda curious about the divide- is it because of specific environmental reasons or certain agricultural practices?
