

Microwave Apple Pie Filling
Hi all! First time poster so sorry if format is incorrect. I've been trying to lose weight and always trying to find sweet snacks and dessert-y type things that are healthier. I usually ate pastries for breakfast, and I've been working on making this recipe great and <150kcal, so I hope y'all enjoy! Let me know if you try it!
Ingredients:
- ~192g apple (100kcal) (about 2 small apples)
- 5g fresh lemon juice (1kcal) (if anyone has good 0kcal lemon juice please let me know!!! I am a huge lemon fan in everything I eat/drink)
- 3g ground cinnamon or to taste (7kcal) (I like mine very cinnamon-y)
- 5g cornstarch (19kcal) (can add less or more depending on how thick you'd like it!)
- 6g oats (23kcal)
- Sugar substitute to taste (I recommend a liquid sugar substitute for this since you won't get any graininess! I use RxSugar and it's perfect for this and a great lazy simple syrup stand in for beverages)
It's as easy as cutting up your apples to your desired size (note that larger chunks will take longer to soften and smaller chunks could get mushy. I like mine to be about 1.5cm long or so) and then combining all of the ingredients in a microwave-safe container (I usually use a mug). Give it a good mix, and depending on how juicy your apples are, add about 1-2 tablespoons of water. Microwave it on high for 2 minutes, take it out, stir it. If you're satisfied with the softness you can just take it out, give it another good mix, let it cool, and then eat away! If you're wanting it softer, continuing microwaving at 30 second intervals, stirring in between each interval.
This, for me, is the perfect sweet treat, and the macros aren't bad! I also find that, beyond satiating me, it really fills me up!
