Beef Ribs

Had a rack in the freezer and wanted to break in the new Weber Searwood 600 XL.

The rub was simply 16 mesh black pepper and Lawrey's Seasoned Salt.

I wanted to try the Bar A BBQ method, so I started them off with the smoke boost setting at 180⁰ for about an hour and a half then bumped it up to 220 for another hour. Once the bark was set I bumped the temp again to 275. My internal temp goal was 195, and after about 6 hours total they hit 193 then the temps started to drop due to a late stage stall. I wrapped them in foil and bumped the temps to 300⁰ for about 30 minutes and in his my goal temperature.

Pulled and let them rest until internal got back down to 150 and that's what you see here. They were so damn good I had to stop myself from eating.

I can't decide

I recently got a pretty nice bonus at work so I've allocated about $1500 of it for a new pellet grill. I'm a lifelong offset user, but it's just too damn hot where I live to be messing with a fire in the summer months.

I saw the Pit Boss Titan at Academy the other day, and I have to say it looked quite impressive. I started watching review and test videos and it looks pretty ok, but it didn't knock my socks off.

The Weber Searwood XL 600 and Traeger Woodridge Pro are also in consideration. I wanted a Camp Chef Woodwind Pro 36 was a strong contender, but I can't seem to find it available at the moment. I need some convincing fellas. My budget is around $1500 give or take so what should I get?

Question After a Brown Out

My outside unit is a large American Standard. The unit has always started loudly, as if it has a hard start on it but it doesn't. This afternoon a storm rolled through and caused a brown out. The unit outside started making a loud pulsing whirring sound then it quieted down but wasn't blowing cold, so I shut off the entire system for 45 minutes to allow for the safety feature for brown outs to do it's thing. I turned it back on and it's cooling like it normally does but loud start doesn't happen anymore, in fact the unit is now super quiet when it runs now. It's like allowing the system to "reset" after the brown out made it work more efficiently and quietly.

This is a long post, but does anyone have any insight on what might have happened? This unit has been a pain in the ass since I bought my house so it's nice to not have it sound like a cannon blasting right outside my window when it turns on now.
