Tips for applying polyurethane to sanded plywood

I’m finishing my garage this weekend and using 1/2 inch sanded plywood to finish the walls after insulating. I’d like to finish with a satin polyurethane but I’m reading it’s not recommended to use rollers as it will show more. However, it would take be forever to apply with a brush. Any tips?

Extended BF from 6 → 8 hours at 78°F - noticeable improvement

I've been baking sourdough for a while with consistently decent results. My standard process: mix all ingredients, 3 sets of stretch and folds 30 mins apart, finish bulk at 6 hours, pre-shape, 30 min bench rest, cold proof overnight, bake in the morning.

I use a Brod & Taylor proofer set to 78°F, so temperature has always been controlled and consistent. Most bulk fermentation charts put 78°F at around 5.5–6 hours with a 30% rise, so I always targeted that window. Results were always good but the crumb was often a little denser than I wanted, particularly toward the bottom.

I recently accidentally let bulk run to 8 hours at the same 78°F and the crumb structure improved noticeably with more open, better hole distribution, and less density at the bottom point.

8 hours at 78°F seems long by most benchmarks, but I'm wondering if my starter and environment just need more time regardless of what the charts say. My starter is about 5 years old and I believe to be strong. Anyone else find their sweet spot significantly beyond what temperature charts predict?

Edit: I usually add 20% starter of 70/30 white:rye / 20% inoculation

Asphalt tar on chenille couch

So my dog managed to get some asphalt tar in her paw and the proceeded to jump on our new couch with performance chenille fabric. Curious if anyone has any ideas, or are we toast? Goo Gone? WD40? Just go with the professionals? Any input is appreciated!
