This one is for the professionals on here: who here uses "laser" knives on a daily basis and if so, what do you use?

Cost aside, usually too afraid to bring "lasers" to work. Shitty cutting boards, tasks done quickly, and the prospect of leaving them at the station while running off to do something else always has me worried.

Am I overly paranoid? Could something say, a Takamura SG2, survive a high volume line? Or are knives like that best left for home/more controlled environments.

Does anyone here have experience with buying directly from makers online, and not in person in Japan?

Recently discovered Yosimitu Kajiya and already in the process of buying some of his stuff! He speaks English (or at least is willing to use a translator) and we communicated directly via Instagram DMs.

Are there any other makers with a web presence like this and if so, how was your experience?

Looking to add a Shindo gyuto to the knife roll. Anyone got any leads? 210 preferably, but could consider 240 as well.
