Is this game for me?

So, me and two friends are looking for a new base building game to play after windrose and zomboid, plus the combat seems up to our alley. We mussed the free weekend, stuff happened irl and no one could hop in during that time

The thing that leaves us on the iffy territory, is the whole MMO aspect, and the server reset part.

First that we plan to play it only the 3 of us, from what I researched it is possible to make a private server and have no interaction with other people and make it fully PvE. Bjt then we worry that the game is built on the social aspect, and without it, it might end up feeling hollow.

And second that I also saw that resets are optional when playing private, but then, is there enough content in the game that one single full progress is a good game, like terraria where you take a few months playing, kill moon lord, make a good house and dont feel like touching the game for the next year or so, or is it something like tribes of midgard where the fun comes from finishing one entire campaign in a week just to reset and do it again with a different seed.

In short, the game seems to be what we are looking for, but with 2 "optional" aspects that we dont like a lot. My question is how much of the game is lost, when you deactivate these 2 aspects (mmo, and resets).

SIB subnautica 2 or V rising

Looking for something to play in a group of 3. We are just around the "end" of windrose, group is already discussing the next game to fit the slot. Subnautica seems to fit better with what we want, but its way too early, and double the price, even if you say its onna get better, we find it annoying when you gotta stop playing cause its not done yet, and come back, a lot later no even knowing what you were doing. V rising on the other hand, seems way more complete, and has a whole layer of combat on top. But we are unsure on it, progression wise, the whole arpg x survival balance, and we heard some stuff about it being closer to some ark survival kinda thing, which we didnt enjoy a lot.
