Convince me Fort Collins food is more than pizza, sandwiches, and brewery food trucks. Please

Every time I eat out I end up somewhere that's fine. Not bad, just fine. Same menus, same "elevated" pub fare, and the highest compliment anyone gives is "it's good for Fort Collins."

I know the good stuff is out there. Show me the places that actually make you excited:

The hole in the wall you'd send a food snob to

Best meal you can get for under $20

Something that isn't pizza, a sandwich, or a burrito

The spot you'd be sad to see close

Bonus points for anything family run or hiding in a strip mall.
