


Week 32: Gimmicks - Dubai Chocolate Strawberry Parfait
We layered melted chocolate, diced strawberry, and toasted kadayif tossed in pistachio cream. These were absolutely scrummy!!!! And totally worth the hype. 😋

I used pork loin because it's what I had. It was still good. Just not as juicy as other cuts. I'm glad I made this though because it made me realize it isn't difficult to make and I love char siu!
I made cooked some red cabbage in water to make the water blue. Then I soaked rice noodles in the water. Finally, I applied some lemon juice and watched them turn pink! It worked great and was very satisfying. I used the noodles to make some veggie spring rolls and served with soy sauce chicken thigh over the extra cabbage. I think I could have cooked the cabbage for longer to get a deeper color but I liked the light blue. The results were fun and yummy! 👩🔬🧪🔬😋
I need to eat less red meat and more legumes so I decided to use kidney beans for the prompt 😋
This week I wanted to make some classic chuckwagon beans with a hunk of bread and dried fruit. But then I saw a tiktok recipe of some harissa beans with poached eggs and thought that's basically the same thing! And was excited for a little more flavor, haha.
What do you think? Could cowboys appreciate this interpretation of their beans? 🤠

This is a niscoise inspired salad. Calling it a garden salad cuz the theme. I don't garden in my apartment. I tried to keep a basil plant alive til this week but it died 😅 this salad was amazing!

I thought this perfectly described my efforts for this new year! I decided this year would be the one I embark on my health journey of changing my life for good. This meal represents the death of my old eating habits in favor of my new ones. I want to have an emphasis on eating fiber and protein, cooking with single ingredient foods, less sugar and fat, fruit with every meal, and make it enjoyable! I've been cooking a lot this year and I feel like my efforts are paying off. ✨️

Blended up raspberry jelly with chipotle peppers & lime juice & such. Then I used it to baste some chicken thighs. Yummy but I wish I had more jelly or used less chipotle so that the raspberry flavor was more pronounced
