Rehandling Dao Vua Sakimaru Slicers

So I have a pair of Dao Vua Sakimaru slicers in 270 and 350mm. I seem to have a bit of rust on the bigger one - I’ll resolve that - but I would love to change the handles, however I’m unsure how big of a project that is.

I really love the slicers, for their price, they are like mini swords - cant wait to break one out at the next major family holiday dinner. I'll carve the roast *shwing* out comes the sword..

I live close to District Cutlery and I’ll likely shop the work out to them (as well as refinishing the blades) but just curious if anyone has done this before. I would go with something very striking, like a bright red or white wood / resin handle.

I am assuming I’d go with Wa handles for a 240mm gyuto? For refinishing them, I was thinking of having the kurouchi-ish finish polished off, and maybe go pure mirror finish, which then I would carefully induce a patina on. Or if District can give me a nice Katsumi, that might look amazing as well.

Bunka debate: Shiro Kamo vs Matsubara

Shiro Kamo Aogami Super Bunka 180mm or Matsubara Blue #2 Nashiji Bunka 170mm. I already have a Shiro Kamo 210mm Gyuto from the same line, and a Matsubara wavy face petty - I dont strictly need another knife - but I feel my Bunka collection is a bit lacking (mostly stainless steels). Between the two options, which is a more excellent example of the form? I tend to prefer lasers, so maybe the Shiro Kamo might be better?

SOTC: Knives at my GFs house

This is my ‘collection’ that is pre-positioned outside of my home. I spend a bit of time at my GFs place and often cook there, and having a few nice knives on hand makes life easier.

I originally purchased her a set of Zwilling Pro Le Blanc knives - she insisted on white handles - and the 7” Pro Le Blanc Slim Chefs Knife is a pretty nice blade. It’s a nice combination of agile in the hand and durable enough that one can’t easily damage it - overall a nice western knife that feels more like my Japanese knives.

She originally wanted a SMEG knife set - but other than the knife blocks somewhat nice appearance
- she has a lot of SMEG appliances - the knives themselves were trash - so the Zwillings on a magnetic knife holder was the compromise.

Since then I added a Nigara SG2 Migaki Tsuchime bunka with a custom pink handle from Sugi Cutlery and a Gihei HAP40 Kazahana Sandoku from Knifewear (can’t find their link)

The Nigara ‘Barbie’ knife - as she calls it - performs well, and the Giehei feels like a laser - so it’s a decent set for any cooking duties I may undertake.

The Zwilling paring knife works well enough, so between the two higher end knives and her collection I can handle nearly all jobs in comfort.

I impulsively bought both this and the carbon steel versions - decided to keep the carbon steel version and let the Swedish stainless version find a new home.

[Selling][US] Nigara Hamono AS Migaki Tsuchime Gyuto and Nakiri

Selling gently used Nigara Hamono AS Migaki Tsuchime Nakiri in 180mm and Gyuto in 230mm.

The Nakiri was purchased from Carbon Knife Company in 2025 for $250. I used the knife for a few prep seasons but no major use, and no sharping.

The Gyuto was purchased from u/FirstAndLastDay, it’s originally a ‘scratch and dent’ from Sharp Knife Shop. I paid $175, and I see no flaws in the knife. I have not used it since purchase.

I am asking $215 for the Nakiri and $160 for the Gyuto, or $350 for both. Shipping included.

I feel this is a really good deal for two kick ass knives - I am freeing up inventory and budget for other purchases.
