How's This Itinerary?

My wife and I (middle-aged, U.S.) are visiting Mallorca for 5 days in early Sept. Want some beach experience, but I also want to feel like I'm in Europe, not Fort Lauderdale. Would like to avoid the worst over-tourism, so skipping Deia and Valldemossa, even though they're supposed to be beautiful. Have been agonizing over this itinerary for a month, so now turning to Reddit for advice/suggestions:

Tues: arrive 7 am from EWR. Renting a car, driving to hotel Bordoy Mostatxins in old town Alcudia. Will be too early to check in, but hope to store our bags, then maybe wander the old town, have lunch somewhere, then check in, nap, cocktails then dinner somewhere walkable.

Wed: drive to a beach or two. Want something scenic, but not the Instagram-famous secluded coves with no parking and no services. Thinking Formentor or maybe Cala Sant Vincenc. Walk to dinner again somewhere in old town Alcudia.

Thurs: would like to do a boat tour to see a couple of the harder-to-get-to beaches. Leaving from Port de Pollenca or Cala d'or? Suggestions welcome here.

Fri: check out, drive to airport, return rental car, then taxi to Palma. Check into Hotel Nakar (tossup with Puro Grand, which looks like a cooler historic building, but Nakar has rooftop pool w/view). Wander old town Palma, see the Cathedral and/or the Royal Palace, have lunch somewhere. Cocktail on the rooftop, then dinner in old town Palma.

Sat: train to Soller and tram to the port. Touristy, but also kind of relaxed sightseeing. Lunch at some cafe in Soller, then train back to Palma. Late afternoon dip in the pool, cocktail, then walk to dinner somewhere.

Sun: morning taxi to the airport.
