Considering going from Sony to Canon - need insight on glass

Hey all

Long time lurker, first time poster.

Background: I do event work where I shoot photo and video (70/30ish split). I am decent at it, but by no means great yet. I do however get paid for all my work revolving around said events, but photo and video are in the "we need you to do this as well"-category because it's better than what they can do on an iPhone. I do this 2-4 times a year and enjoy it very much.
It tends to be low-light.

In my day job I do photo/video (to a lesser degree) on Sony and have borrowed from mates and said job for above mentioned events, but I am now in a position to acquire my own gear, so I'm not depending on other people - and in case I switch jobs.

Been looking at Canon for a while, but I could do with some advice and insight. Hope you guys can help me.

My budget is around 4000€. Dual card slots are important to me.

The used market isn't great atm where I live, but I do scout for deals.

Been looking at these set-ups:

R6ii + RF 24-70mm F/2.8 L IS USM - this puts me around my budget. I could do some hard stretching for a used 70-200mm down the road, but it's gonna take a while for me to get the extra cash.

R6iii + RF 24-105mm f/4 L IS USM - similar price

R6ii + RF 28-70mm F2.8 IS STM + RF 70-200mm F/4 L IS USM - this puts me a little above, but I can probably find a used 70-200.

R6iii + RF 28-70mm F2.8 IS STM

Basicly I'm trying to figure out:

If the 2.8 L-lense is worth the insane price tag or the STM is perfectly fine?

If the step up from r6ii to r6iii is a decent investment if I can get used glass down the road?

If the range from 24-105mm is worth the lost stop because L-lenses are awesome...?

The whole point of buying my own gear is also to do even more shooting as I wanna get better. Mainly family outings, events, parties, concert work.

Sorry for the long post, but I hope your insights can help guide me in a good direction.
