5kg of kimchi ft. Kagekiyo B1D stainless

I was given a gigantic Savoy cabbage and a conic cabbage from a friend's garden, so I made 5kg of kimchi!

Plenty to chop: chives, green onion, daikon, onion, garlic, ginger and a little bit of the cabbage as well. I could hear my Takada sigh as I reached for the Kagekiyo once again.

Instead of making my porridge/slurry with just water, I usually make a dashi and use that instead for more depth of flavour. I also didn't have saejot / 새우젓 (salted fermented shrimp) so I instead used dried shrimps with heaps of fish sauce.

My flat is about to smell of kimchi for the next few days as it ferments 😅

New Display in the kitchen

Unfortunately I don't have space for a magnet in my current kitchen, and I missed having some knives on display as they were all in a drawer.

This rack is from hitohira, I think they're overpriced, I wish I had the tools to make one myself, but alas I do not so here we are.

Still a few more knives in the drawer, but I'm down to 9 knives now which is pretty good I think 😅

The Kagekiyo gyuto & petty are seeing the most board action. I often will take out the petty to cut a few things and then end up chopping way more than I thought I would. This knife is such a breeze to use and cuts extremely well.

NKDish - THINNED OOBA WORKSHOP KIGAMI HAKATA

Hello,

I got this knife as a memento back in 2022 while visiting Ohba workshop in Fukuoka. I got it even though it was pretty rough, thick, and a few other not so nice adjectives. That being said, it was my first time visiting a blacksmith and meeting a maker in person, and that gave me the itch to dive deeper into the knifemaking aspect of my obsession with knives.

I decided to get a Naniwa Gouken Aramusha #220 and thin the knife out. I unfortunately did not get measurements of plenty photos before I started working on it... but they come thick, and wonky, I'm sure chadilac17, BertusHondenbrok or CinnabarPekoe could attest!

I have near 0 experience with stones, last time I touched one was 4 years ago. I have a little bit of time on my hand currently, so this was a fun project that took me about a week or so to complete. I'm quite happy with the thinning process, and I abandoned finishing the knife well, but good enough for a first try (plenty scratches visible).

Also pretty happy I was able to fix the tip seemingly without affecting the shape after dropping the knife in the sink and snapping quite a bit off the tip!

Originally bought from the man himself in Sakai in January 2024 for $450 CAD. I picked the best ferrule one could find out of the box at Mizuno, and then Jun's wife put it on for me. Honestly thinking about selling the blade only and keeping the handle to myself it is one beautiful ferrule!

This has been collecting dust in storage away from me for the past 3 years. Originally bought in 2022 at StaySharpMTL for $550 CAD.

Knife is used, but in good condition. It needs to be sharpened. Probably been sharpened twice, both time at StaySharpMTL, if my memory serves me well, but it has been in storage for a few years now. I cleaned it up a bit with Koyo paste.
