My new favorite quick and easy Costco meal, Fakey Butter Chicken
Obviously this is not super authentic but it still tastes really good, in my opinion, and is at least 90% of the way there to an actual Indian restaurant (YMMV, this is just what my Caucasian palate tells me). Haven't done the price per serving but can guarantee it's a lot cheaper than going out.
This is my post-costco go-to meal because it's so easy and delicious and the last thing I want to do after a hectic Costco trip is cook for an hour.
- KFI Butter Chicken sauce - 1 Jar, simmer in pot
- Rotisserie Chicken - 2 breasts, cubed, add to sauce to heat through. (I prefer white meat and skin removed for this dish).
- Skotidakis Tzatziki sauce - acts as Raita, I thin it out with a bit of milk/cream to desired consistency.
- Tandoori garlic naan - I like to heat these up in a pan for some crisp but a few seconds in the microwave is fine too.
- Kirkland basmati rice - to be honest though, I usually just do some Uncle Bens microwave basmati rice and it's just as good imo.
1 jar of KFI and 2 breasts yields about 4-5 portions handedly. If you use microwave rice, or have some pre-made, it can all be assembled in about ~5 minutes.
