Grilled Brats - How to Achieve an Appetizing Exterior

I hope my title makes sense!

New Pit Boss owner (850), and this is my first time grilling bratwurst with it. I used to parboil them in a pan and finish them up on charcoal to give the exterior some nice color and a bit more "snap" to the skins.

I'm concerned that this is not easily achieved with the Pit Boss. I realized that there's a slide plate to expose the food to the direct flame, and I assume that's what I'm supposed to do, but at the same time I have concerns about all the drippings getting into the fire pot and really gunking it up.

I've been watching a fair amount of Pit Boss grilling videos, and nobody ever seems to use the slide plate for direct grilling, even for things like burgers and steaks. Is the slide plate just a gimmick, or can I safely use this feature without worrying about ruining the fire pot?

First Use - No Grease in the Bucket?

Hey all. I had a successful first cook with my Pit Boss 850; cooked up two racks of baby back ribs. Everything went well, however I noticed my bucket had no grease in it. I'm concerned that perhaps there's a blockage, but I'm also making room for the possibility that this particular meal may not have generated enough grease to get all way to the bucket.

I cooked it at 250 for about 3.5 hours, it was wrapped in foil for one of those hours.

Obviously I'd like to avoid a grease fire, so I'm interested to hear from the folks here if this is something I need to be concerned about. Thanks in advance!

Best Liquor Stores in New Orleans?

Hey all. My family and I are taking a road trip to New Orleans (and ultimately, Dauphin Island in Alabama). We're going to be in the city for a few days (already got Latitude reservations!), and I don't want to deal with the hassle of bringing my own stuff, hauling it in and out of hotels, or it being in a super hot car, etc., so my plan is to stock up on my way out of New Orleans where we'll wind up at a cottage on a beach for nearly a week.

What are some of the best liquor stores in the city? Any store that might include some locally unique and/or standout spirits/liqueurs would also be a plus. For instance, I had a cocktail not long ago with Lafcadio botanical rum (a New Orleans rum) which exposed me to a genre of rum I hadn't even considered before. Maybe on its own it's not great, but in the context of the Navy Grog I had it really put an intriguing and tasty twist to it!

I'll probably just be making myself daiquiris when at the beach, but if there's any interesting pickups to get in NOLA, I'm all ears.

Good Distilleries in Eastern MO?

Hi all. My dad is making his semiannual trip from Idaho to St. Louis to visit, and I have often taken him out to various wine country areas not terribly far from the STL metro area (usually max hour of driving).

I'd like to switch things up a bit and hit a distillery or two, ideally one that features a tour of the facility. Any recommendations? He's 80 years old and long car rides have become tougher for him, so anything within an hour radius of the STL area would be preferred.
