Taking my 80 yr old mom to Disney

My mom is turning 80 in December and really wants to go to Disney. She hasn't been since 2017. She has a bad knee so we already recommended we get her a scooter or wheelchair, but other than that she is in good health. I know it wouldn't be a good idea for her to ride Tron, GOTG, and intense coasters like that, but she wants to ride Tiana, Big Thunder, and Seven Dwarfs mine train. She also wants to watch all the shows. I want her to have a good time, but her advanced age on some of the rides does concern me. Does anyone have a parent around that age that still does those type of rides, or is there an older person here who can share their experience? Should I try to talk her into doing only the milder rides?
