AO role

Hello all!
I’ll soon be starting as an administrative officer in a government department.
I’d like to be as prepared as possible so I’m asking for advice about anything I can do in the next few weeks to make sure I hit the ground running.

Holding chicken thighs

I have a bbq for twenty five people tomorrow and will be cooking boneless skinless chicken thighs, followed by burgers and hot dogs. I’ll be doing the chicken first, then keeping them in a warm oven for 30-40 minutes.

Recipe: marinated overnight in reggae reggae sauce. Seared on the grill and cooked 90% of the way through. Placed in warm oven in Dutch oven to hold, after basting with more sauce.

My question is, is there anything I need to do to make sure it doesn’t dry out? I know thighs by their nature will stay juicy but I’m a bit worried about holding them for so long.

Garda vetting question

Hello all, hopefully someone can put my mind at ease over this.

In 2005/6 I was in an accident and was found liable. I was convicted of driving without due care and attention and received a 5 year endorsement on my license. Would this show up on Garda vetting?
