Should these cuts be closer in?

I didn’t make these cuts, but I’d like to fix them if they’ll affect the health of the tree. And, if anyone has recommendations on sites that have good information on this, I’d appreciate the help.

Drywall or cement board bathroom walls?

Mid-century home. Thought I’d just switch out the vanity and redo the flooring, but found out they cut into the walls to install the last one. I already bought a standalone vanity. Do I just fill in these sections with drywall, or should I go for cement board? Also, thoughts on keeping the 60’s tile, or rip that out while I’m at it?
