Just had a nice steak Sunday with a big NY strip from Costco. Here’s my process:
-Dry brine in fridge overnight
-S&P before going on, Kinder’s Buttery Steakhouse seasoning before and after final flip, finishing coarse ground pepper
-Grilling on a basic Weber Kettle
-Using Vortex for (in)direct heating, Kingsford original bricks
-flipping every 60 seconds, one 60 rest on indirect at end before pulling
-15 min resting
