Having an issue with PCSX2 not saving config/settings.

I've set it through ES advanced system settings and they don't apply when I load any game. I've changed the settings in PCSX2 whilst playing a game, and it works during, but once I close the game and load it, or another game up again, it's back to its default. What am I doing wrong? tearing my hair out here.

Please help!
