What is the dial in the middle?

Dashboard face. I thought it was related to the temperature reading above but it doesn’t seem to be. Is it HRV?

“Exercise time” on Pace 3 watch face, what’s the criteria?

Obviously it counts the time while you are tracking an activity but I have noticed that it also adds a few minutes randomly through the day if I am walking/jogging but not recording an activity. I can’t find any details of when it starts counting “exercise” if you’re not recording. Is it based on heart rate?
