Gluten free but end up eating more ultra processed foods

Why do so many people go gluten free but end up eating more ultra-processed foods?

Something I’ve noticed is that a lot of people cut out gluten, but then replace normal foods with packaged GF versions that seem way more processed extra starches, gums, oils, sugar, additives, etc. It feels like the focus becomes the gluten free label itself instead of the overall quality of the food.

For people without celiac disease or a medically necessary reason to avoid gluten, what’s the thinking behind that switch? Is it just convenience, marketing, lack of options, or do people genuinely see those products as healthier?
