Graphite Irons

Decided to treat myself to some new irons now that I’m taking golf a bit more seriously, I have some questions.

I’ve been looking online for something that’s in the game improvement/ players distance group, used, no real brand allegiance, for less than around 700$. Really not terrible parameters to follow, I’ve comfortably found a lot of options and have enjoyed researching the different brands.

I’ve basically boiled it down to 2 sets that I think fit what I’m looking for (JPX 921 Forged/HMP mix set, ZX5 mk II) , but the Mizunos have steel 120g shafts while the Srixons have 125g graphite shafts

Here lies my issue, I’ve only ever played steel shafts in my life (played weekly as a kid but lost touch and picked it back up 3-4 years ago, finally finding true time to try and improve) I am a busy individual who can really only hope to play every other weekend if I’m lucky , so I’m not interested in spending 1k+ getting fitted and buying brand new irons.

My question is will I notice a difference? I sit around a 20 handicap and have generally played stiff shafts from being a former baseball player. I’m really just looking for some newer clubs with some newer technology (currently playing my dad’s 20+ year old MP30s) but I don’t want to mess up by getting the wrong equipment.
