Onion quiche

I wanted to make zwiebelkuchen (onion cake) but was short on time so made something more like onion quiche. I used the wholly gluten free brand pie crust so that, and it was amazing (if a bit brittle). I have made quiche and pies with other crusts and these are the best, IMO.

If you’re interested in making something similar, you sauté up about 5 medium to large onions with 1/2 tsp caraway seeds until onions are translucent. Arrange them in the pie crust but don’t press them down. (Make sure your crust is on a cookie sheet or pizza pan so it doesn’t flex the pan when moving it to the oven.). In a bowl, combine 1 tsp salt, 3 eggs and 8 oz creamy dairy products. (I used 4 oz sour cream and 4 oz chevre.). Blend until creamy and pour over the onions. Bake at 350 for about 45 minutes. Let cool for 15 minutes before slicing.

To methotrexate or to not methotrexate

My rheumatologist said things are looking good and things seem stable. I have puffy hands and feet and my hands ache but it doesn’t seem to keep me from doing anything. The doc said we could try methotrexate but we can also just keep monitoring.

Any thoughts about whether it’s better to go on to stop disease progression or not? There’s definitely inflammation there because we did a trial of prednisone and it helped.

It’s not just hot flashes

Do the doctors have to tell the insurance company that menopause is all about hot flashes? Because that’s all my doctor ever talks about.

I finally got on the estrogen patch after they pulled me off of oral estradiol. One of the biggest things this has done is stopped finger ulcers that have caused me problems over the last few years, presumably as a result of limited scleroderma. I had no problems when on prempro. They came back during the two months I went off estrogen, but went away again after they put me on the patch. Doctor says I should go off estrogen in 3-5 years, but I don’t want to if it means I have to go on methotrexate or another immunosuppressant to keep my other symptoms under control. I have told him about this, and he acts like it has nothing to do with the estrogen.
