Sautéed Maitake and onion (with a dash of salt, pepper, smoked paprika, and a drop of maple syrup), and smoked Gouda.

The Vol-Au-Vent de Champignons is a standout menu item at Bistro Du Jour in Washington DC. “This elegant French classic features a golden, flaky puff pastry shell generously filled with wild mushrooms, Comté cheese, and baby spinach, capped with a poached egg and a savory "truffle cappuccino" foam”
Wow.
Sautéed onion, peppers, mushrooms, butternut squash, some veggie meat. And a sprinkle of La Chinata (Spanish smoked paprika-highly recommended).
I’d like my poached eggs to be more nicely shaped, but this was quite tasty!
