I don't know if this was fixed in the recent patch, or if it just required these specific steps, but I've figured it out

When you go into your wardrobe and hide the weapons you don't want shown, the game doesn't allow you to "confirm" your load out,

BUT if you then switch an armor cosmetic and confirm (and back to your armor cosmetic of choice and reconfirm if you wish), the game then registers the weapons as hidden.

They're still shown in the inventory, but in the world, loading screens and everywhere else they remain hidden
