Seared salmon & roasted root vegetable with dukkah spice

This is a riff off of a meal plan salad (I think from Blue Apron)

Small - medium diced sweet potatoes & carrots, roasted at 400’ for ~20 minutes. Coat with either cooking spray or light EVOO, S&P, and liberal amount of dukkah. Can be made up to 2-3 days in advance.

Toss roasted veggies with:
Orange supremes
Arugula
Optional (and not pictured) toasted sliced almonds
Dress with equal parts rice wine vinegar and orange olive oil (can use unflavored), S&P

Top with seared salmon (S&P, EVOO) made in the moment

Help me convince my hubs to foster fail!

UPDATE!! We split the difference and the universe intervened. The compromise was to attend the adoption event, and if our girl was still there at the end she was our girl… she’s currently conked out on my lap, officially as my baby 😍🥰😍 Thank you for all of your support and hilarity r/cats!! 🫶

We fostered a combined two litters with the thought of foster failing - we just lost our two very best sr. buddies over this last year- and we’re keeping two, but I’m really hoping to sneak in a third!

This sweet little nut gets along great with the two we’re keeping, and I just adore her. Help Redditors! She has an adoption event scheduled for tomorrow 😭

Grateful for foster kittens while grieving kitty crossing rainbow bridge

We took in a litter of 5 kittens after the passing of my very best buddy last month, and while nothing can fill the hole his absence has left in my life, they have helped me heal and feel something other than just pain, during such a tough time.

I’m so grateful for both having my sweet senior kitty for 17 amazing years, and for life gifting me with these loves when I needed them.

Building that box out where the gutter record player side proved deceptively difficult, but I love how this turned out!

This sweet little cat has converted even the most ardent of cat doubters, and has thrived despite being a diabetic the last 10 years! He is my whole heart.
