How would you insulate this space?

How would you insulate this space when the framing is 8” off the brick/concrete walls? The room is a cold storage room in basement, underneath front porch. The reason the framing is off the walls is because of this concrete ledge (footers?). Next to this room is a finished basement. 100 year old century home.

Ignore the dirt mound. I’m in process of digging that out and pouring a concrete slab to be level with the existing floor. Framing will go up after.

Does it make sense to install 1x3 sleepers on the backside of the framing to hold up insulation, and install foam board or rockwool, between the studs?

First smoke on a the new KJ - St Louis ribs no wrap

I’m no rib smoking pro by any means so I wanted to try something new on my new KJ - a keepin it simple recipe with minimal work.

Total cook time was 5 1/2 hours at 250 degrees. Seasoned with TJ’s Coffee Garlic rub and mustard. Basted every 45 minutes with an ACV + brown sugar + cayenne + red pepper flake mix after the first 2 hours. Towards the final 20 minutes I spread Kinder’s bbq sauce on half the rack as I wanted to compare sauce vs no-sauce. Sauce half was a bigger hit with everyone. Surprisingly there wasn’t much of a smoke ring compared to other ribs I’ve made with a lot more effort. Overall everyone loved it.
