My main meal for today - salad, nuts, and grilled tofu (1500 cal, 71 g protein, 35 g carbs)

I went to play on an empty stomach this morning. Came home, and was really hungry. I made two meals - a breakfast and a lunch, and ate them both back to back.

Normally, when I have such a large meal, I suffer from a food coma and fall asleep as long as I'm sitting. Big, big nap. Not today, today, I'm buzzing, wide awake, and full of energy! This is what I made:

"Breakfast":

  • 1/2 cup Roasted Pumpkin Seeds
  • 1/2 cup Roasted almonds
  • 1/2 lemon juice
  • 2 red radishes, chopped
  • 2 mini bell peppers / red peppers, chopped

Add to a bowl, toss with your preferred seasoning and enjoy.

Lunch

  • 1/2 block of super firm tofu, cut into cubes, covered in 1 tbsp olive oil, seasoning and then air-fried for 8 minutes.
  • 2 cups of mixed greens
  • 1 small beet diced
  • 1 tsp of peanut butter
  • 1 tbsp of tahini
  • 1 lemon juice
  • 1 tbsp of hemp seeds
  • Salt to taste (add less to start, you can always add more later).

Add it to a bowl, mix. And enjoy!

Altogether this is between 1500 and 1600 calories. It is very filling, high in protein, low in carbs, good amounts of fats, calcium and other micro-nutrients.

At this point in my day, I'd probably have coffee, but I'm still buzzing from lunch!

[edit: forgot an ingredient (hemp seeds) - so we're looking at closer to 1600 cals; a bit more fat; and 3g of more protein]

A tomato peanut marinade for BBQ / oven / air fryer tofu.

This takes about five minutes to prepare.

This marinade will flavor your air fryer tofu, skewers, mushrooms, to perfection with a tangy tomato taste similar to Indian tandoor.

To make the marinade mix in a bowl:

  • 1 tbsp tomato paste
  • 2 or 3 cloves of garlic chopped up fine or minced.
  • 1 tbsp smooth peanut butter
  • 3 tbsp vinegar
  • 1/4 tsp turmeric
  • 1/4 tsp cayenne powder (or less / more)
  • 1/4 tsp salt
  • 2 tbsp water

Keep mixing it until it's homogenous.

To use:

I've marinated super firm tofu chunks (tore them with my fingers instead of cutting them to create lots of surface for the sauce to stick to).

I've marinated them for five minutes, and I've marinated them for three hours. The three hour version is better because the flavors soak into the tofu better.

Air fried at 400F for 14 minutes, turning once at 7 minutes.

Other uses:

You'll have some left over in the bowl - I chop up some salad and mix it into the left over marinade. It tastes pretty good as a salad dressing too! =).

As I stare at another empty plate, I wish I'd taken some photos for you all.
