Beef has gotten entirely too expensive. My local Safeway has a clearance meat section. It’s all by that days sell-by date. Today they had boneless short ribs at 45% off. I’ll accept $6 per lb. for a little more than 3 lbs.

I did Mississippi pot roast with them.

6 tbsp butter
1 pkg au jus
1 pkg ranch seasoning
1/2 cup of pepperoncini juice with a handful of the peppers.
Low 8 hours

I put it on mashed potatoes.

It’s good, but I’m not certain it’s worth the work. I decided to make Mediterranean yellow rice instead of galuska. Goes well with plain basmati rice too. I cut the recipe in half, but the family is still going to be eating this for the next few days.
