[Recipe] Accessible Peanut Butter Chocolate Ice Cream
I couldn't find a pb choc recipe that I liked anywhere online - many of them have several very specific ingredients that aren't good for a (broke) Creami novice like me, and the ones that I could make all came out with a nasty texture. So I came up with my own recipe, with accessibility in mind. Texture is super smooth and it tastes just like Reese's Puffs cereal.
Wet ingredients, into the pint container:
- 2 cups chocolate milk
- 1-2 tsp vanilla extract
- 1-2 Tbsp blue agave syrup (or your sweetening syrup of choice)
(We'll also add some heavy whipping cream, but not yet.)
Dry ingredients, into a separate bowl:
- 1/4 cup sugar
- 5 Tbsp powdered peanut butter
- 1 Tbsp cocoa powder
- slightly less than 1/4 tsp xanthan gum
Mix the dry ingredients together with a fork until well blended. (I understand the temptation, but I strongly recommend that you don't skip the separate bowl. The cocoa powder and xanthan gum won't play nice if you try to blend them directly into the wet ingredients.)
Once the dry ingredients are blended, add them to the pint container with the wet ingredients. Using the fork from the last step, stir until combined.
Once all ingredients are well combined, add heavy whipping cream until you've reached the max fill line.
Give it one final stir, then freeze for 12-24 hours.
Spin up on ice cream mode. Will need at least one respin.
