Going to Italy in a few months, which amaro should I try to find?

Southern not here and I like salmon patties like my mom used to make. They normally include an egg and about 1/4 cup of flour to help hold the patties together. My question is, can another floor work the same way? I have at hand arrowroot, rice flour, cornstarch, tapioca flour, and vital wheat gluten. Which of these would you use in place of AP wheat flour?

Before you say "cracker crumbs or bread crumbs", I've tried both and didn't like the results. And adding another egg is not what I want either.
