Fried rice made with the oil from frying chicken cutlets is delicious!

Fry the chicken cutlets with plenty of oil.

The leftover oil from the chicken cutlets is very fragrant; add more if needed. Then add some chili peppers, diced cucumber, and onions and stir-fry until fragrant.

Next, add the rice and stir-fry. Add some salt, light soy sauce, and dark soy sauce. Finally, add the diced chicken cutlets and stir-fry briefly before serving.

Fried rice with tofu, mushrooms and broccoli

Crisped up some tofu and put it together with left over jasmine rice, mushrooms, broccoli, eggs, garlic, ginger and scallions. Sauce was made of dark and light soy sauce, oyster sauce sugar, white pepper, Shaoxing and a pinch of MSG. Turned out pretty good on a shitty Monday

Green beans in fried rice? Yay or Nay?

I believe that green beans do not belong in fried rice of any kind.

In desperate times I've used those frozen "mixed vegetable" bags that contain carrots, peas, corn, and green beans.

I have nothing against green beans in other dishes or on their own, I love them. However, I think green beans absolutely ruin a good fried rice.

The corn is also somewhat questionable, but it's not as offensive as green beans.

Preferred Rice? A blend?

So growing up in a Japanese household, my mother always used Nishiki, Botan, or a Calrose rice to make fried rice. Smaller plumper grains. Doesnt dry out as well as others (Jasmine, Basmati, or a blend of the 2.

I been using Nishiki at the restaurant and people line up for this and messages when are we serving again. So, what is your favorite rice to use?

The rice is the easy part to cook, its the damn Rib meat Eggrolls and Brisket Rangoon that are the killer to prep

[Homemade] Kimchi Fried Rice

Hey all

This is my version of Kimchi Fried rice

Ingredients :

Sushi rice

Sausages (instead of pork belly)

Bell pepper

Oi Kimchi

Onion

Egg

Oil

Salt and pepper

How to :

Cook the sausages and onion first in oil. Once sausage is cooked and onion is translucent add kimchi until all the juices are fairly squeezed. Then add rice and toss it all of this is cook at medium heat.

Serve with an egg sunny side up (a bit runny) and then sprinkle with seaweed and voila!

Where to get fried rice with ham not bacon/pork

Does anyone know what places sell this type of fried rice, with the ham not the pork? There used to be a place around north Geelong but was years ago.

Finally made decent fried rice lol

Had some leftover rice so I just made fried rice instead of letting it sit in the fridge again lol. Just threw in some eggs, garlic, onion and whatever veggies I had. I usually mess up fried rice somehow but this one actually turned out pretty good 😂Now I kinda wanna try adding bacon or chicken next time. What do you guys usually add?
