oil floating on top, masala cooked down properly, no cream no butter. took forever stirring but worth it restaurants have ruined what curry means honestly, everything's just butter chicken now with a different name. this is the real deal, messy and dark, not instagram pretty but tastes like it should.

Made this dum-style at home, kept the plating simple biryani on one side, thinly sliced onions on the other, just how it's traditionally served. Happy to share the recipe process if anyone's interested!

So living alone, it always seems too much of an effort to cook a traditional curry from scratch and hoping after you have spent a tonne of money on the ingredients, that it works out okay. These guys are doing traditional Indian curries from their own home in Belmont and rotate the menu specials daily. Has anyone given it a go?
